Vegan Berry Oat Pancakes


Hi all! Here is another one of my favorite breakfasts! These pancakes are not only easy to make, but are also low in fat and sugar, and they keep you full…..for several hours! Here’s the recipe!

 Yields 3 servings


-1 cup of Multigrain Pancake mix (I use mix from Trader Joe’s)

-1 cup of plain soy milk (I recommend organic soy milk from Costco because of its creaminess)

-1/2 cup of rolled oats

-1/4 tsp of vanilla extract

-3/4 cup of mixed berries

-a dash of cinnamon (for topping)

-honey to drizzle (optional)



  1. Add the pancake mix to a small bowl. Then, slowly add the soy milk to the mix. Stir well.                                                                                                            fullsizerender-9  fullsizerender-10  fullsizerender-11

  4. Add the berries and stir well. If you are using frozen berries, heat them in the microwave for approximately 1 minute first.                                                                       fullsizerender-16  fullsizerender-17 fullsizerender-18  fullsizerender-19
  5. Heat a non-stick pan over low-medium heat (at around 3.5 to 4.5). Spray with non-stick cooking spray before adding the batter.                   fullsizerender-20
  6. Pour the batter into the pan to form your pancakes.                                   fullsizerender-21  fullsizerender-22
  7. When the edges of the pancakes look toasted, and there are no more bubbles forming on their surfaces, flip them over. Continue to flip them over and over for approximately 5 more minutes. This will allow the middle of the pancakes to fully cook. After a couple of minutes, turn the heat down on your stove to prevent the surfaces of the pancakes from burning.                                                                            fullsizerender-24  fullsizerender-25

Peanut Butter Yogurt Banana Breakfast Bowls


So lately, I’ve actually been slightly obsessed with making these. Just the other day I told my mom about this new recipe I’d just found, and the first thing she said was “Let me guess, does it have peanut butter and plain yogurt in it?” (it actually did NOT, for the record, Mom) 🙂 This has, however, become one of my favorite breakfasts!

However, the main reason I like making these bowls so much is because they keep you full for a long time. Whenever I have these, I’m not hungry for at least another 4-5 hours, which is super awesome as I don’t always have time to eat snacks during the day. They also contain protein, carbs, AND (healthy) fat, as well as low amounts of sugar. It is a well-balanced breakfast that will give you the energy to power through your morning!

Here’s how I make these bowls! 


  • 2/3 cup plain yogurt. (Don’t use Greek yogurt, though. It will be too tangy)
  • 1 tbsp smooth peanut butter
  • 1/4 tsp cocoa powder
  • 1/3 cup of plain granola or other unsweetened crunchy cereal (I usually use Nutty Nuggets)
  • 1/2 medium sized banana
  • Small amount of honey to drizzle
  • Pinch of cinnamon
  • Pinch of cocoa powder (optional)


  1. Place the peanut butter into a bowl large enough to stir things around. fullsizerender-2
  2. Sprinkle 1/4 tsp of cocoa powder on top of the peanut butter.fullsizerender-3

  3. Stir the peanut butter and cocoa powder until they are well blended.

  4. Add the plain yogurt to the peanut butter/cocoa powder mixture.fullsizerender-6

  5. Stir the yogurt and the peanut butter/cocoa powder mixture until it is smooth and creamy. This may take a moment.                                                                                                    fullsizerender-7  fullsizerender-8  fullsizerender-9

  6. Sprinkle the crunchy cereal on top of the yogurt mixture.fullsizerender-10

  7. Cut the banana into thin slices. Then, place the slices on top of the crunchy cereal.fullsizerender-11  fullsizerender-12

  9. Sprinkle with a pinch of cinnamon. Then, if you choose to, sprinkle with a pinch of cocoa powder.                                                                                                         fullsizerender-14  fullsizerender-15
